My 2 cents :

Conversion in WORD :
- can only be saved as docx-file
- when opening in Libre Office (i suppose it will be the same in Office), the text is quite correct, but partially illegible. You just have to save it as a doc to have a clear text.

Inserting text :
As always with PDFs, either it works or it doesn't. It all depends on the software it was created with.
